Thanksgiving Vegan Stuffing Recipe
Is that Tofurky Roast looking a little lonely? Try this tasty and savory vegan stuffing recipe, it's simple and easy. Here's what you'll need:
5 cups of stale bread cubes
1-2 cups cooked rice(cold left-overs work great)
1 cup chopped onion
2 cups chopped celery
2 teaspoons dried thyme, crushed
1 1/2 teaspoon dried sage, crushed
1/2 teaspoon dried ground rosemary
1/4 cup chopped fresh parsley
1/4 cup EVOO(extra virgin olive oil)
1 cup vegetable broth
salt to taste
Directions:
- Preheat oven to 375º
- In a large bowl, combine the bread cubes and the rice.
- Sautee the onions in a little bit of water for about 5 minutes. Add the celery and cook for until soft.
- Stir the cooked onion and celery into your bread and rice.
- Mix the oil into the vegetable broth and pour over the stuffing mix.
- Add salt to taste.
- Cook covered for 25 minutes. Then uncover and bake until brown on top.
