Thanksgiving Vegan Stuffing Recipe

Is that Tofurky Roast looking a little lonely?  Try this tasty and savory vegan stuffing recipe, it's simple and easy.  Here's what you'll need:

5 cups of stale bread cubes
1-2 cups cooked rice(cold left-overs work great)
1 cup chopped onion
2 cups chopped celery
2 teaspoons dried thyme, crushed
1 1/2 teaspoon dried sage, crushed
1/2 teaspoon dried ground rosemary
1/4 cup chopped fresh parsley
1/4 cup EVOO(extra virgin olive oil)
1 cup vegetable broth
salt to taste

Directions:

  1. Preheat oven to 375º
  2. In a large bowl, combine the bread cubes and the rice.
  3. Sautee the onions in a little bit of water for about 5 minutes.  Add the celery and cook for until soft.
  4. Stir the cooked onion and celery into your bread and rice.
  5. Mix the oil into the vegetable broth and pour over the stuffing mix.
  6. Add salt to taste.
  7. Cook covered for 25 minutes.  Then uncover and bake until brown on top.
